I did not use flour in the composition, it is a pie without dough or sheets, so we can include it in the category of LCHF recipes (low carb-high fat / low in carbohydrates - high in fat).

It is a tasty and easy to prepare pie recipe, you can make it anytime and serve it at any of the three main meals of the day. Also, a few pieces cut in a casserole and packaged at work, college / school go great. You can also prepare it when you invite them to dinner and you want to surprise them with something different.

For this pie I used a combination of lightly salted cow's cheese, light telemea, zucchini, a sprig of dill and a sprig of green onion. It seems to me that these ingredients fit perfectly together. If you want to give up the pumpkin, you can grate 2 carrots in their place or make a pie only from cheese and greens. Just don't give up dill and green onions. That would be a great pity. In my opinion, these two ingredients do all the work in this pie.

* 500 gr. fresh lean cow's cheese
150 gr. telemea light (I used Hochland)
2 tablespoons natural yogurt (can be replaced with cream cheese or sour cream)
5 eggs + 1 egg for the crust
2 small pumpkins
1 link dill
1 bunch green onions
salt and pepper (to taste)

* You need fresh, lightly salted cow's cheese, not for dessert. I recommend you take at least 2% or 3% fat, not 0.2% or 0.5%. I had a cow's cheese bought in bulk from the market, but you can also find it in box stores from: Covalact, Pilos, Napolact, etc.

PREPARATION
Grate the pumpkins, put them in a sieve, add a little salt over them, massage them by hand, then let them squeeze for 10-15 minutes. After they have been squeezed, squeeze them well in the hand so that the excess liquid comes out. Squeeze them as well as you can. This step is very important.

In a large bowl, place the cottage cheese, the telemeau crushed into smaller pieces by hand, the 2 tablespoons of yogurt, the zucchini squeezed well with liquid, dill and finely chopped onion. Season with salt and pepper to taste.

Mix all the ingredients by hand, then taste and see if it still needs to be seasoned. Beat 5 eggs in a small bowl and add them over the rest of the ingredients. Mix everything again by hand.

Put the pie composition in a tray covered with baking sheet. I used a tray measuring 25 & # 21520 cm. Level everything nicely with a spoon, then put a new batter on top. It will have the role of forming a beautiful and reddish crust on the surface of the pie.

Put the tray in the preheated oven at 180 ° C for 40-45 minutes, until a reddish crust forms on top. The pie will grow nicely while it is in the oven, and after you take it out, as it cools, it will be left, but don't worry, that's how it should be.

After baking the pie with cottage cheese and zucchini, let it cool for at least an hour, then place it on a tray covered with a layer of 3-4 kitchen napkins to absorb more liquid. As there is no flour in the composition, the pie leaves a little water, so some kitchen towels will save the whole thing.

Cut into pieces and serve with pleasure.
