1. Soak the gelatin in water at room temperature, stirring well. Let it hydrate for at least 10 minutes.

2.Caramelize the mandarins (if you don't have time, you can use them as such, but the caramelized ones are tastier): peel them. Separate them into slices, removing the white fibers from each other.

3.Put the butter on a hot pan and wait until it melts. Put the tangerine slices in the pan and add 1.5 tablespoons of sugar. Mix carefully with a silicone or wooden spatula. Do not use metal spoons, as caramel may crystallize.

4.Caramelize the mandarins for 1-2 minutes from the time the sugar melts, stirring frequently. Then transfer them to a plate and let them cool.

5.Put the sweet cottage cheese, vanilla sugar, 5 tablespoons of fermented cream and about half of the remaining sugar in a deep bowl. Mix everything with a blender until you get a homogeneous composition.

6.Put the remaining cream and sugar in a separate bowl. Beat them with the mixer running at low speed until the sugar is completely dissolved.

7. Add the cheese composition to the cream. Mix them with the mixer.

8. Heat the hydrated gelatin in the microwave for 10-15 seconds, stirring with a spoon each time. The gelatin must be heated to about 50 ° C.

9. Gradually pour the melted gelatin into the cheese composition, mixing well with the mixer or whisk each time. Do not pour all the gelatin at once, as undissolved particles may remain and the composition will not coagulate evenly.

10.Add the caramelized mandarins to the cheese mixture and mix. Leave about 10 slices for decoration.

11. Transfer the resulting composition to the shape of your choice. Using a spoon and mixing directly into the form, spread the tangerines all over the cake.

12. Cover the form with cling film. Refrigerate the cake for at least 2 hours.

13. Immerse the form in a bowl of hot water for 15 seconds. Then cover it with a platter and turn it over.

14. Sprinkle the surface of the cake with coconut flakes. Decorate it with tangerine slices.
