Coconut cookies are this Monday's treat, I hadn't posted cookie recipes for a while because I had lost my ritual of preparing them on Saturday afternoon for a while. The other day, however, I got the urge for coconut cookies that were similar to those found in the packaging of Danish cookies so I set to work to reproduce them at home. Some crumbly and fragrant coconut cookies came, next time I'll add a little more butter and then they will be identical to my beloved Danes. How to make coconut cookies
Work the softened butter together with the sugar until it forms a cream.
Add the coconut flour and mix it into the mixture, then the egg and mix until all the ingredients are combined.
Finally add the vanillin, baking powder and flour and knead until it forms a loaf.
Let the coconut biscuit dough rest in the fridge for 1 hour, then take the dough and roll it out between 2 floured sheets of parchment paper.
With a cookie cutter, cut circles that you will place on a baking sheet covered with parchment paper.
* The dough is a bit difficult to work with, because it is sticky: if you do not care about the precise shape, to speed up the times you can gradually take piles of mixture and shape giving the shape of small pizzas.
Bake in a preheated convection oven at 180 ° C for 10-15 minutes or until the biscuits are golden.
Let the coconut biscuits cool before serving, either natural or with a drizzle of melted chocolate on the surface.
