How to make mushrooms in oil
Place the mushrooms on the cutting board and clean them by removing the earthy part with a knife. Then rub them with a damp cloth to remove any earthy traces.
Put water, vinegar, salt in a saucepan and bring to a boil.
Drop in the mushrooms and cook them for 3 minutes from the moment when boiling resumes.
Then drain them and put them to dry on a clean cotton cloth.
Put the dry mushrooms in a bowl and add the pepper, chopped garlic and chopped parsley.
Transfer the mushrooms, thus seasoned, into sterilized jars, cover them with oil and mash them with a fork to release any air bubbles.
Close the jars with lids.
Put your mushrooms in oil in the pantry and wait at least 1 week before consuming them.
