THE sweet zucchini muffins these are the last rather special sweets I have prepared. I had already tried to insert zucchini in a dessert and I liked the result very much, so I thought of replying, this time combining the zucchini with almond flour instead of chopped hazelnuts and I must say that this second combination is also very deserving! So if you want to experiment and propose a different sweet than usual, try these sweet zucchini muffins: You will not regret it ;)
How to make sweet zucchini muffins
First of all wash and peel the courgettes and grate them with a grater with large holes.
Put all the dry ingredients (sifted flour and yeast, salt, sugar, almond flour) and mix.
Separately, instead add eggs, vanilla and oil and beat them together with whips.
Then incorporate the liquid ingredients into the dry ones, finally add the courgettes too.
Pour the mixture into the molds filling them 2/3 (I have lined the molds with paper cups for an aesthetic issue, you can use silicone molds without anything or normal buttered and floured aluminum molds).
Then cook for about 25 minutes in a preheated convection oven at 180 ° C.
The sweet zucchini muffins are ready, let them cool before serving.
