There grandma's cheesecake or cream cheesecake is a real treat, there is little to add. This is the cheesecake version of one of the cornerstones of Italian cuisine, the grandmother's cake. The result is a cold cake, ok, but the combination is almost difficult to describe. A crunchy and buttery base supports a custard and mascarpone filling. The whole is crowned with a decoration of toasted pine nuts. The combination of flavors and textures certainly refers to grandma's cake, but in a more airy and modern version, like a cheesecake. In short, I say that the recipe deserves it, but let me know what you think;)


How to make grandma's cheesecake

First prepare the cream: boil the milk with the vanilla pod, then remove the vanilla.
Beat the egg yolks with the sugar, then add the flour first and then the flavored milk.

Transfer the mixture into a saucepan and bring to a boil, stirring constantly, continuing to cook until a thick and smooth cream is obtained.
Move the cream into a larger container, cover with cling film and let it cool.

Once cooled, mix the cream with powdered sugar and mascarpone.

Finely blend the biscuits and mix them with the cream.

Create an even layer of biscuits on the bottom of the mold (lined with parchment paper), compacting well with your hands.
Pour the cream over the biscuits and level the surface well, then compact in the fridge for at least 3 hours.

After 3 hours, toast the pine nuts well in a non-stick pan.

Grandma's cheesecake is ready: dip the pine nuts in the icing sugar, use them to decorate and serve.
