Pasta alla norcina is an Umbrian first course that I love, every time I am near Perugia, I look for some typical trattoria to eat it and a good butcher to buy sausages. The key elements for the perfect success of pasta alla norcina are obviously Norcia sausages and a sprinkling of black truffle, possibly Umbrian. How to make norcina pasta
Peel and crumble the sausages
In a large pan pour a drizzle of oil and the chopped onion, then add the sausages and brown.
Deglaze with the white wine and add a pinch of salt.
Add the cream and a grated black truffle and black pepper
Meanwhile, cook the pasta in abundant salted water. Drain the pasta al dente and pour it into the pan
Sauté everything in the pan for a minute.
Serve the norcina pasta by adding black truffle flakes and, if you prefer, some Parmesan cheese
