The recipe for this berry pie it's from my aunt Anna, Swedish by birth, from La Spezia by adoption, in these days of vacation here with her, she gave me some recipes from her country. Among the many Ligurian and Swedish dishes that I tasted during my holidays, this cake with berries is a dessert that struck me in particular, probably because we made it together with berries collected during our trip to the Parco del Cerreto;) The sweetness and crispness of the base blends harmoniously with the pungent taste of blackberries, currants and raspberries giving the dessert a very special taste. How to make the berry pie
Mix the softened butter with the icing sugar, lemon peel and vanilla
Then add an egg and finally the flour and yeast
Mix everything creating a soft but firm mixture, like a pastry.
Grease a cake pan and sprinkle it with breadcrumbs.
Spoon the mixture onto the pan.
Spread the berries in the center and press a little to set them in the dough
Sprinkle the layer of berries with brown sugar and bake at 170 ° C. Bake the cake for 45 minutes.
Let the berry pie cool before serving.
