Mendiant rose recipe of 12-12-2018
THE mendiant they are a typical dessert of the traditional French and Belgian confiserie, composed of a chocolate disc, studded with dried fruit. Mendiants, as long as you don't want to temper the chocolate, are as simple to make as they are spectacular. I made a version with glazed rose petals, pistachios and pine nuts which together created a beautiful color and a really interesting taste. You can accomplish these Mendiant to the rose and give them at Christmas, perhaps by putting them in nice transparent bags with some colored bows.
How to make rose Mendiants
Blanch the pistachios in boiling water for a few seconds, drain, peel and set aside.
Chop the restyled roses and prepare the pine nuts.
Chop the chocolate, put the 3 types of chocolate separately in 3 bowls then melt in a bain-marie.
With a spoon, pour them on several sheets of baking paper in order to obtain discs of 4-5 centimeters in diameter.
Spread the roses, pistachios and pine nuts on the chocolate discs, then let the chocolate solidify.
Once the chocolate has dried, remove the mendiants from the parchment paper with the help of a spatula.
