The next day, strain the infusion (remove the flowers) into a pot, and add the sugar (and a few vanilla seeds or vanilla sugar, for flavor). Put the pot on the fire, and when it boils, collect the foam from the surface, wiping the walls of the pot with a clean, wet napkin.

Let the syrup boil for about 30-40 minutes, until it binds. When ready, pour the boiling syrup into bottles or jars, staple them and wrap them in thick blankets. Leave them like this, to cool gradually, at a temperature of about 2-3 days. Keep the syrup in the pantry in the house.

How to make acacia syrup

If you want to make three liters of acacia flower syrup you need at least two kilograms of flowers. Add here two kilograms of high-quality sugar, four liters of water, four sachets of lemon salt, a small teaspoon of table salt. Next to these you put four more vanilla sachets and the peel of a lemon.

First of all, the acacia flowers will wash very well. Poor washing is required to remove insects and dust. Drain the flowers. In the meantime, s3 break the stems of each flower.

  5. In another pot, add the sugar with 1 liter of the syrup obtained, stir continuously and leave to boil for about 10 minutes, until the sugar is completely dissolved and the syrup takes on a brownish hue.
  6. Add the rest of the acacia flower infusion and simmer until the liquid is reduced by half.
  7. Transfer the hot syrup to the bottles and leave to cool.

For serving, mix 2 tablespoons of acacia flower syrup with 400 milliliters of mineral or plain water. Or you can take 2-3 teaspoons of undiluted syrup before meals.
