I have loved this recipe since I saw it at Motănel, whom I thank for inspiration.
But I had the opportunity to taste such a pie, in the sweet and strong version, I really liked it.

  • 400 g dough for pie sheets
  • 400 g of salted goat cheese
  • 200 g of cow's milk, salted
  • 200 g of fresh cow's cheese
  • 150 g cream
  • oil for spreading sheets and tray
  • 6 eggs
  • 1 l milk
  • hot pepper jam, to serve

RECIPE PREPARATION Pie created with salted cheese:

Put the salted cheeses on the grater, or crush them with a fork, then mix them with the fresh cottage cheese. Add the cream and mix well. Then add three eggs and mix the composition again. Salt is no longer necessary to add, because we use salted cheeses. You can add aromatic herbs, or fresh greens, according to your preferences. I preferred it simple. Turn the oven to 200 degrees. Thaw the pie sheet dough at room temperature. There were 12 sheets in the package, so I used 3 sheets at a time. We spread the sheets of dough over the foil with which they are wrapped. On a worktop we place a sheet and grease it with oil, using a brush. We place the second sheet over it, we grease it with oil, then we place the third sheet that we no longer grease. Over half of the surface of the sheets we spread 1/3 of the cheese composition in more uneven layers. Over the cheese composition we bring the simple sheets, press them lightly and then wrap everything in the form of fans or accordion. Place the fan thus formed in the tray greased with oil, then proceed in the same way with the rest of the pie sheets. I used a tray measuring 23/40 cm. Put the tray in the preheated oven for 30 minutes, or until the sheets are well browned on the surface. Meanwhile, mix well the remaining 3 eggs with a pinch of salt and milk. Remove the tray from the oven and prick the pie with a fork from place to place. Pour the egg mixture with milk on top and put the tray back in the oven for 30 minutes, or until the composition is absorbed by the pie and its surface is nicely browned. Then, let the pie created with salted cheese to temper slightly, slice it and serve it with great appetite, together with your loved ones. It is very good and simple, but we served it with hot pepper jamwhich goes great with savory cheeses.

1. Grate or grind the cheese finely and mix all the ingredients for the filling. The composition must be quite fluid, if it is too sticky add more cream or an egg.

2. Turn on the oven and heat to 190 degrees Celsius.

3. Place 2-3 sheets in a well-oiled pan. The tray I use is 40 x 28 cm. Grease the top sheet lightly with oil.

4. Place a layer of filling on top of the pie sheets.

5. Continue the same way, alternating 2-3 sheets with the cheese composition, until 5 layers of sheets and 4 of filling are obtained (depending on the size of the tray). The last layer must be sheets. With a special pastry brush, lightly grease the surface with oil.

6. With a sharp knife, cut the pie, now, as raw, in portions sized according to the taste of the tasters.

7. Beat the egg well with mineral water and sour cream and flood the surface of the burek with this fluid composition. Allow this fluid composition to pull the sheets a little.

8. Burek tray with salted cheese and bake in the preheated oven at 190 degrees and bake for 45-50 minutes. You can see the ready burek in the image below.

9. Allow to cool slightly in the pan. Cut the pie with cheese, following the cuts made previously.

If you still have a little patience, wait for it to cool a bit in the tray. If you don't burn anymore, sigh with pleasure Good appetite!

Turkish pie with salted cheese

Today I remembered a salty cheese pie I had for breakfast in a small hotel in Istanbul, tender and fluffy, only good with a yogurt or a cup of milk, but it works well as a snack at school or at work. I've been thinking about this pie for a long time, but I kept postponing it, I don't know why, but today was her birthday!

I am really fascinated by everything that means confectionery, but also by pastry equally.

I really like working in the kitchen and I don't understand how almost nothing works for some & # 8230 it happens to me too, but quite rarely, but even then I find a solution so as not to give an epic fail. No, I'm not bragging, but if I see something somewhere and I like it, I have to implement it the next day. The word comes the next day, I do them as best I can, within the time limit. And even if I don't have a recipe, the experience and the visual memory help me a lot in what I do and sometimes it seems that I exceed any limit, any expectation.

Ingredients Turkish pie with salted cheese

  • 200-250 ml of milk
  • 200 g cream with 25% fat
  • 1 cube of 25 g of fresh yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 600 g white flour
  • 120 g butter
  • 50 ml oil

How to prepare the dough:

Put the yeast with the sugar in a bowl and mix until you get a paste. Add half the amount of warm milk, cover with foil and leave in a warm place to activate the yeast.

In a suitable bowl we put the sifted flour, salt, cream, activated yeast, oil and with the help of a silicone spatula we mix until it becomes inefficient, after which we move to manual kneading or with the help of a food processor. We need to get a fairly soft dough, but non-sticky, elastic, smooth and homogeneous.

Put the dough in a bowl greased with oil and covered with a foil of freshness and leave to rise until it doubles in volume.

1. Bring the right edge over the dough, leaving one third uncovered. Grease with butter and press about a third of the remaining amount.

2. We come with the right side over the one folded before and grease it again with butter and sprinkle another third of the remaining amount.

3. Bring the top over leaving a third uncovered, grease with butter and sprinkle the remaining telemeau.

4. We also put the bottom over the one brought from above. Turn the dough with the last folded part, on a work surface sprinkled with flour and spread the pie evenly with the dimensions of 25/35 cm. Put the pie in the lined tray and leave it to rise covered in a warm place for another half hour.

Grease with beaten egg, sprinkle with sesame seeds and cut with a sharp knife, in the form of a ray from place to place the first 2-3 layers.


Put the tray in the oven at 200 degrees for 15 minutes, then reduce the temperature to 180 degrees and bake for another 20-25 minutes.
